Diamond
Cheese Biscuits
¼ lb. lard, softened
2 Tbsp. baking powder
¼ lb. butter, softened
½ lb. American cheese grated
8 cups sifted flour
2 ½ cups milk
1 Tbsp. salt
yolk of 1 egg
2 Tbsp. sugar
1 Tbsp. light cream into flour
Preheat oven to 350 degrees
In a large mixing bowl, use a pastry cutter to
work lard and butter until coarse. Add salt,
sugar, baking powder, and grated cheese and mix
all thoroughly. Slowly add milk, stirring until
mixture is of biscuit-dough consistency. On a
lightly floured surface, roll dough out ¾ inch
thickness. Use a sharp knife to cut dough into
2” X 3” diamond shapes. Place biscuits on
ungreased baking sheet. Make an egg wash by
beating egg yolk and cream together lightly.
Brush wash atop biscuits and bake until lightly
browned, about 25 minutes.
